Rum Balls
makes approximately 50 small rum balls
8 oz Powdered Sugar
4 oz Rum
3 oz Light Corn Syrup
15 1/2 oz crushed Vanilla Wafers
6 oz chopped Pecan pieces
Stir together the powdered sugar, rum and corn syrup. Add crushed vanilla wafers and peacans. Mix until evenly moistened.
Use a teaspoon to divide into portions and form balls. Place on a parchment or wax paper lined cookie sheet.
Mix together the following ingredients. Roll rum balls in mixture until evenly coated.
4 oz Powdered Sugar
2 Tbls. Cocoa
Store in an airtight container with parchement or wax paper between the layers. These can be frozen.

Why am I doing another blog?
Now, that's an excellent question. Guess I was inspired by Julie and Julia and the fact I got three cookbooks for Christmas. No, I'm not going to cook every dish in those volumes--but I might find some that look promising and post them here. I'm hoping to share recipes from friends, and perhaps some inspired by characters in my books. Now, that will be fun and interesting!
So if you enjoy cooking, eating, or simply perusing recipes, stop by. I plan on posting a new recipe once a week, maybe more often. Depends on how hungry I am.
